Liquid nitrogen is simply nitrogen (which makes up 78% of our atmosphere) in a liquid state. It is -321 degrees and is obviously very cold. Because it freezes in record time, using liquid nitrogen to make frozen yogurt and ice cream minimizes the size of ice crystals and results in a much creamier, smoother treat. This means we can make your ice cream or frozen yogurt to order right in front of your eyes! Liquid nitrogen is safe because it completely evaporates during the freezing process.
